Coffee and Chocolate Roulade
Indonesian version
Ingredients:
75 g butter
3 egg whites
8 egg yolks
100 g caster sugar
65 g cake flour
10 g milk powder
15 g cocoa powder
1 tsp instant coffee powder (dissolved with a little water)
50 g dark chocolate, grated
Buttercream:
50 ml whipping cream
100 white chocolate, finely chopped
185 g butter
75 g icing sugar
1 tbs coffenoir pasta
1 tsp instant coffee powder (dissolved with a little water)
How to make:

Bahan:
75 g mentega
3 putih telur
8 kuning telur
100 g gula pasir halus
65 g tepung terigu protein sedang
10 g susu bubuk
15 g cocoa powder
1 sdt kopi instant (larutkan dengan air)
50 g dark chocolate, parut
Buttercream:
50 ml whipping cream
100 white chocolate, potong-potong
185 g mentega
75 g gula halus
1 sdm coffenoir pasta
1 sdt kopo instant (larutkan dengan air)
Cara:

Buttercream:
50 ml whipping cream
100 white chocolate, finely chopped
185 g butter
75 g icing sugar
1 tbs coffenoir pasta
1 tsp instant coffee powder (dissolved with a little water)
How to make:
1. Preheat the oven to 180°C and grease two baking sheets (22 x 22 x 3 cm) and line with parchment paper.
2. Beat butter until pale and creamy. Set aside.
3. In other bowl, beat the egg and sugar until thick and pale.
4. Add the sifted flour, milk powder, and cocoa powder stir gently. Add the butter and coffee and grated chocolate, stir until all combined.
5. Pour the batter into baking sheets and bake for 15 minutes.
6. Place the cake onto towels cover with parchment paper and sprinkle with caster sugar. Roll up cakes carefully while it still warm about 5 minutes then unroll.
7. Buttercream, heat the cream and add white chocolate, remove from heat, stir until chocolate melted. Set aside to cool.
8. Beat butter until pale and creamy, then add icing sugar, continue beating until well combined. Add coffenoir pasta & instant coffee, mix well.
9. Add chocolate mixture, beat until thick and creamy.
10. Finishing, spread buttercream on cakes, roll up cakes (first roll up one cake, then continue with other cake). Wrap tightly with parchment paper for 10 minutes.
11. Spread remaining butter cream on cake surface, decorate if desired.

1. Panaskan oven 180°C dan olesi 2 loyang ukuran 22 x 22 x 3 cm dengan sedikit margarin dan alasi dengan kertas roti.
2. Kocok mentega sampai pucat dan lembut. Sisihkan.
3. Kocok telur dan gula sampai kental dan pucat. Masukkan tepung terigu, susu bubuk dan cocoa powder sambil diayak.
4. Masukkan kocokan mentega, larutan kopi, dan cokelat parut, aduk rata.
5. Tuang ke dalam loyang, panggang selama 15 menit.
6. Keluarkan kue dan letakkan pada serbet yang sudah dialasi kertas roti. Gulung kue selama masih hangat selama 5 menit. Kemudian buka gulungan.
7. Buttercream, panaskan whipping cream lalu masukkan cokelat putih, aduk hingga meleleh. Sisihkan dan dinginkan.
8. Kocok mentega sampai pucat dan lembut, masukkan gula halus sampai semua tercampur rata. Tambahkan pasta coffenoir dan larutan kopi instant, kocok rata.
9. Masukkan lelehan cokelat, kocok terus sampai kental dan creamy.
10. Penyelesaian, olesi setiap kue dengan buttercream, lalu gulung satu kue, dilanjuti dengan kue kedua (sehingga menjadi satu gulungan kue saja). Gulung rapat, padatkan dengan kertas roti selama 10 menit.
11. Oles sisa buttercream ke seluruh permukaan kue. Hias sesuai selera.
