150 g butter
150 g margarine
2 egg yolks
1/4 tsp salt
75 ml whipping cream
125 g edam cheese, grated
125 g cheddar cheese, grated
500 g cake flour (example: Segitiga Biru Flour)
20 g milk powder
20 g corn starch
Glaze:
3 egg yolks
Topping:
Cheddar Cheese, grated
How to make:
1. Preheat the oven to 150°C, grease baking sheets with margarine.
2. Using electric mixer, beat butter, margarine, egg yolks and salt until light and pale (about 5 minutes), then add the whipping cream, continue beating.
3. Gradually add the edam & cheddar cheese, gently stirring it. Add flour, milk powder and corn starch by sifting it to the mixture. Stir until all mixture are combined.
4. Roll the mixture using rolling pin for about 6mm. Shape with ring cutter, glaze with egg yolk and sprinkle grated cheddar on top.
5. Place in baking sheets and bake for about 15 - 20 minutes until golden brown.
6. Cool the cookies on wire rack Store in an airtight container.
