Chocolate Truffles
First, you have to know what is chocolate. Chocolate is originally made from the cacao seeds. But, most chocolate used in this recipes are which contain cocoa solids, cocoa butter and sugar. They are dark chocolate, bittersweet chocolate, milk chocolate. Wait... what about white chocolate? Actually, white chocolate is not a real chocolate because it doesn't contain cocoa solid. It contains of dairy solids, sugar and some of fat (but not cocoa solids).

Now, I'll explain what is chocolate truffle. Chocolate truffle is a combination of cream and chocolate, also called ganache. The ganache texture is vary depend on how much cream do you add. The more cream you add, the texture becomes more softer. |
Type of cream:
- light cream, contains 18-30% butter fat
- whipping cream, contains 30-36% butter fat
- heavy/thick/double cream, contains 36-40% butter fat
For making the best ganache, use the heavy cream. If you do not find it in your store, you can also use the whipping cream.

Talking about truffles, you have to know about tempering chocolate. We use it for coating the ganache. The good tempered chocolate will make the coating shining and smooth. Always using a couverture chocolate for coating which contains at least 35% cacao and 31% cocoa butter. Why? Because the higher cocoa butter content, it will make the chocolate more fluid, so you will easy to work with it and the shell around the truffle will be thinner and it makes the truffle more elegant. |

How many type of chocolate do you know? At least, you know there is cocoa powder and chocolate block. But there is more than that, such as dark chocolate, semisweet chocolate, and couverture chocolate. The difference between them depends on percentage of cocoa butter, sugar, and cocoa liquor.
